At GPE we have a long experience in sale, export and import of fish for sushi. We can deliver the best quality of fish like salmon and tuna. As some of the first in Denmark we have also experienced by using Danish fish like plaice and turbot for sushi. By freezing the fish with liquid nitrogen we have achieved a quality of the fish, which keeps the original flavour and texture of the fish, and when the fish is defrozen you will notice that there is hardly any water coming out of the fish, as the quick freezing minimise the formation of ice crystals.
